This IPA is spiked with Brettanomyces, a special yeast that, over time, brings about charmingly unpredictable complexities of spice, funk, acidity and more. They started the counterintuitive part for you by aging the beer — first in tanks, then in bottles — for a total of four months, which is plenty to get the funky part(y) started. If you have some additional patience, cellar it up to (or beyond) the Enjoy After date to help the beer reach its full evolutionary potential.
