Subtle wine like tannic qualities and white grape aroma emerged from this Biere Brut, after a rest of 3 years in a single barrel, and led us to offer sour cherries and raspberries for refermentation. Another lifecycle complete, we find an experience akin to that offered by a juicy, fresh Beaujolais. Further aromatic evolution is likely. A light and fresh beer, best accompanied by taking that which faces outward, and turning inwards - when you first came into being, what was experienced? What is your original face?
